Steak Butter

Dear Reader-

Some days, a girl needs a steak. (Especially a girl who can’t seem to get enough protein;)).

And as it turns out, some days, my delivery man answers the call and delivers me some of the best- thanks to Certified Steak & Seafood Company.

So, that evening’s plans for Hawaiian Sliders quickly changed to Filet Mignon…

I just love when that happens, don’t you?

I immediately put the steaks in a water bath to thaw them for a late dinner and got about the business of making Steak Butter.


Certified Steak & Seafood

You see, I am a firm believer in not messin’ with a GOODe thing when it comes to a great steak like the ones Certified Steak sent me.

My steaks just get a little kosher salt and cracked black pepper before hitting a piping hot cast iron skillet the broiler on a chilly day like today.

Steak Butter is a great way to take a fantastic steak to the next level of decadence.

So, while my thawed steaks rested (they were tired… they flew in from Florida and all ;)), I began working on my Steak Butter.

I took a stick of Light Butter (you can use regular butter) and I added 1/2 t of Kosher Salt.

To that, I added 1/4 t of Penzey’s Shallot Pepper… cause you know we are addicted to it 😉 (You can use regular pepper).

Add 3 cloves of Garlic- minced.

And the secret ingredient… 1/2 t Liquid Smoke.

Smash with a fork…

Then take matters into your own hands to blend well.

Next take a piece of plastic wrap and snip about 1-2 T of fresh herbs into fine pieces. I used Parsley and Thyme.

Place butter over herbs.

Roll into plastic wrap to make a log and throw in the freezer to firm up.

By now that skillet in the broiler should be nice and hot.

Place the steaks on the hot skillet and broil for 3 1/2 minutes, flip and broil for another 3 1/2 minutes.

When broiling thick steaks like these, you will also want to broil 1 1/2 minutes on each side as well. (Note: Times produce a medium-rare steak).

Remove the steaks from the broiler and let them rest for about 10 minutes.

Flip the steak and add 1 T of your butter.

Steak Butter

Ingredients

  • 1 Stick Light Butter- Softened
  • 1/2 t Kosher Salt
  • 1/4 t Shallot Pepper or Black Pepper
  • 3 Garlic Cloves- Minced
  • 1/2 t Liquid Smoke
  • 1-2 T Fresh Herbs- Minced
  • 8 Steaks-Broiled or Grilled

Instructions

  • Mix together butter, salt, pepper, garlic and Liquid Smoke.
  • Place herbs on plastic wrap and top with the butter.
  • Form into a log and place in the freezer.
  • Top finished steaks with 1 T of the Steak Butter
