Slow Cooker Pork Tacos

Dear Reader-

I have a confession…

While I oh-so love me some pork… especially pulled pork, I have not really been a fan of shredded pork in tacos/burritos… that is until now.

When I found this recipe in Gooseberry Patch’s new Simple Shortcut Recipes (Psst… my giveaway of this great new book is ending soon, have ya entered?) I was curious about the flavors, excited about the four ingredients and enticed by the slow cooker.

So I lined my crockpot and put in 2 lbs of a pork loin.

Note: The recipe says to dice the loin, but I knew that it would shred right up after 8 hours, so I just threw it in… all for saving time 😉

I added 3 (15 oz) cans of chili beans

And 1 jar of picante sauce… that’s it!

Put a lid on it and cook on low for 8 hours.

Take two forks and shred the meat. Stir into sauce.

Serve up as burritos or as tacos with your favorite toppings OR…

Fix it up in a bowl as a fantastic hearty pork chili… (or add some canned diced tomatoes to dilute it a bit).

Either way, the flavor is amazing! We ate them as tacos and as chili.

This will be a staple in the future and an easy freezer meal!

Ingredients

  • 2 lbs Pork Loin
  • 3 15 oz Cans Chili Beans
  • 1 Jar Picante Sauce
  • Flour Tortillas
  • Optional Taco Toppings

Instructions

  • Place loin in crockpot.
  • Pour beans and sauce on top.
  • Cook on low for 8 hours
  • Shred pork with two forks and stir.
  • Serve on tortillas and top with taco toppings.
