Copper Pennies

Have you ever heard of Copper Pennies? The food, not the Abe mug.
This Goode & Gooseberry Project Recipe is Copper Pennies… 
and I am still studying on this one. Not sure what I think. It is a totally different dish than I am used to…
You cook up 2 lbs of carrots
Meanwhile take 2/3 cup sugar and add 1/2 cup oil
And add 1/2 t salt
1 t. Shire sauce
And a can of tomato soup
Then whisk ‘er up
Add 2 onions and 1 green pepper-sliced
Drain carrots and add them to the mixture.
Now mix ‘er up
And refrigerate overnight
It is an interesting side… Carrot lovers give it a try and tell me what do you think.
