Are These 3 Veggies in Your Freezer

There are few things that fill the kitchen with such an amazing smell as the combination of carrots, celery and onions…

Okay, perhaps the smell of onions, garlic and mushrooms comes close…

Oh and cinnamon apples…

Or cookies baking…

Wait… Okay, so lots of things can make your kitchen smell GOODe… but this little combo is also GOODe for you, so that should count for something, right?

This trio of flavor is also so important that cooks often call them the Aromatic Vegetables…

Smelly Veggies hasn’t quite caught on I guess…

The French even came up with a fancy shamncey name for them: Mirepoix.

I on the other hand LOVE to have them in my freezer for crockpot meals and soups…

So, I take 1 bag of celery, 2 bags of carrots and one bag of onions and get to choppin’

Chop, chop, chop

Are These 3 Veggies in Your Freezer

I then bag up quart bags with 1 Cup Carrots, 1/2 cup Celery and 1/2 Cup Onion and push out all the air and freeze.

I usually throw the quart bags inside a gallon bag for easier freezer organization.

Then, come crockpot or soup day, I throw a bag or two on the counter while preparing my meat or other ingredients to let it thaw a little bit, then I toss in the veggies!

Easy peasey!

So that is my Super Mommy Secret for quick veggies straight from the freezer!

    This sounds like an awesome idea. I don’t “love” frozen prepared foods, but to freeze “partially prepared” foods are awesome. I just had a bag of carrots go bad, wish I had known this before!

    What a GREAT idea!  When I make something with celery, carrots or onions I rarely use the whole bag and then they go bad by the time I need them again.  Just do it all at once and it’s ready to go the next time!  LOVE IT!

    We keep those veggies on hand too. Especially in the cold months, when there’s lots of soup or chowder dinner nights.

    should I admit publicly that I also keep them on hand in the freezer….(Kroger sells them already cut up for ya… 😉

    This is genius! I’m making chicken stock this weekend, but I won’t use all the celery–this will let me save it for later!
