Christmas Cookie Recipes Using Cake MixesDear Reader-

Sometimes I am late to the ball game… ya know when everyone else (or at least a lot of people) seem to know something awesomely cool and then you just discover it…

Enter Cake Mix Cookies into my life…

As a daughter of a former cake decorator, I was ALWAYS in awe of the cake mix aisle… all the flavors… all the choices…

I was always shocked that brides would always choose chocolate or white cake over flavors like cherry chip or orange…

Anyhoo…

Christmas Cookie Recipes Using Cake Mixes

Cake Mix Cookies… now, I am no stranger to the concept of using a cake mix in cookie batter… like I told you last year while making these Santa’s Favorite Cake Mix Cookies, Puddie actually made me a batch of Cake Mix Cookies the night he asked me to be his girl 😉

However, I had no idea that there were multiple awesome recipes out there that utilized the versatility of the standard cake mix!

So, today, I thought I’d share the 3 I have recently found…

Christmas Cookie Recipes Using Cake Mixes

NOTE: Cake mixes have reduced in size and it may affect your results. Use this recipe to make your cake mix the right size.

The Santa Cookie recipe from Gooseberry Patch’s Christmas in the Country is very similar to the recipe he used… except he used Butter Pecan cake mix and nixed the white chocolate chips.

  • 1 Container Whipped Topping
  • 1 Egg
  • Powdered Sugar

Instructions

  • Mix first 3 ingredients well.
  • Scoop dough by spoonful into powdered sugar and coat
  • Place on a lined cookie sheet
  • Bake at 350 for 12-15 minutes

I think that is why I LOVE Cake Mix Cookies… there are tons of flavor choices at your fingertips…

Christmas Cookie Recipes Using Cake MixesThis year, Miss Add and I found two additional cake mix recipes in Gooseberry Patch’s Christmas Cookie Jar Cookbook and whipped them up in four different flavors!

Christmas Cookie Recipes Using Cake Mixes

First up, we were THRILLED to find Cake Mix Cut-Out Cookies!

(Edited to Add: About half of the readers that use this recipe rave about it… and the other half complain with issues of the dough sticking. Use at your own risk. We love this recipe, but we also use real butter and add flour as needed.)

Christmas Cookie Recipes Using Cake MixesI mean what Christmas is complete without cookie cutters?

And this recipe made whipping them up a snap.

Christmas Cookie Recipes Using Cake MixesWe chose to make Funfetti and Strawberry Cut-Outs.

Christmas Cookie Recipes Using Cake MixesYou start with your cake mix…

Christmas Cookie Recipes Using Cake MixesAdd 1 stick of slightly softened butter (NOT margarine or light butter), 2 eggs and 1 t vanilla

Christmas Cookie Recipes Using Cake MixesNow I scraped my bowl and put the dough in a covered bowl in my fridge for a couple hours for easy rolling and cookie cutting…

*EDITED TO ADD: Some readers are reporting that the dough is getting too sticky for them. I am wondering if humidity could be a factor. Regardless, after testing for more user-friendly instructions, I would recommend that dough spends at least one of those hours in the freezer for best results. Also, cake mixes have reduced in size recently and the smaller mix may affect your results. Use this recipe to make your cake mix the right size.

I just went ahead and baked my other cookies while I waited.

But let’s pull a fancy cooking show maneuver and pull that already set dough out of the fridge and continue shall we?

Christmas Cookie Recipes Using Cake MixesFor all those folks who LOVE that “Cake Batter” flavor in their sweets lately… the Funfetti mix gives you that flavor in a cookie and the kids just love it!

Christmas Cookie Recipes Using Cake MixesPlace on lined or greased cookie sheets and decorate with sugars, sprinkles or cinnamon candies…

Then bake at 350 degrees for 12-15 minutes.

    Hi Cris,

For anyone having issues with sticky cookie dough; roll it out between two sheets of parchment paper. Seriously, works wonderfully every time!

Just made these today. They turned out great! So simple and they kept the cut-out shape perfectly:) I did not put dough in the freezer. I did separate the it
into three parts and left the ones I was not rolling out in the fridge until needed.

The sticky dough might be because a LOT of cake mixes are now smaller than the traditional 18.5 oz! Check your box…you may need to add a couple of tablespoons of flour to make almost any recipe using a cake mix come out correctly!

I had to add way more then a couple of tablespoons, I had to add 2 full cups before it was even pliable and I’ve been cooking and baking since I was 8, so it’s not like this was something new, but once you figure out how much flour to add it’s not to bad.

I freeze them for up to a month. And just pop them out an hour before I need them.

The fun fettie cookies were the worst I have ever made… they tasted good but were a pain to cut out and put on the pan and also the timing was way off for them in the oven. I think it only took like 4 minutes and the bottoms were brown
I think it’s safe to say I did not like this pin!

So sorry. Some folks have had trouble while others have raved about it. We didn’t have trouble, and loved the recipe. Thanks for stopping by to let me know how you feel.

I decided to give these a try because my daughter wanted something with flavor and I figured why not! Well, the dough was so incredibly sticky I ended up having to add almost 2 full cups of flour (which is why I turned to this recipe I was trying to avoid a recipe that required all the flour). It took me over an hr just to get the recipe to work enough so I could make the cookies. After that all was well and the cookies were awesome, my daughter loves them and my husband even ate a few and both are quite picky eaters. They stay incredibly soft. But I do think the recipe needs to be revamped to work with the new amount in the cake mix boxes. My daughter requested more today, I am not rolling them out I am just going to do drop cookies instead with the same batter, but make them round instead of using cookie cutters. Just no patience for that today.

When I make cake batter cookies they always come out like pucks of cake that taste like they are lacking icing and don’t have a cookie texture. What am I doing wrong or is that just how they are supposed to be?
