Dear Reader-

I have been waiting and waiting to share some new Gooseberry Patch cookbooks with you and I FINALLY get to share one with you!

101farmhouse

101 Farmhouse Favorites

Truth be told, I already sneaked you a peek a little while ago when I shared these beauties with you…

luscious angel cupcakes copy

These Luscious Angel Cupcakes are divine and really soothe my sweet tooth for only 68 calories per cupcake!

Gooseberry Patch

Looking to drop some pounds this New Year? I love how easily I have been able to adapt these yummy homestyle recipes to my Year 2 Change weight loss needs. In fact, 101 Farmhouse Favorites fits nicely in my On the Lighter Side series I have been cooking up with Gooseberry Patch for the last four months.

Ham and Bean Soup copy

We have been enjoying such warm and filling dishes as this Ham & Bean Soup that is packed full of protein and fiber while sneaking in some veggies.

Easy Peasy Pesto copy

Calling all garlic lovers. This super easy Pesto (recipe coming soon) is packed full of healthy fats and plenty of garlic bite and it is easy to enjoy it in moderation because a little goes a long, long way… and keeps the vampires away 😉

Skillet Chicken copy

By far, the family favorite and dish that now has permanent place on our family’s menu calendar… Skillet Chicken. This tender and juicy chicken is a great substitute for fried chicken and will have everyone gobbling up their veggies and asking for more!

If you can’t tell 😉 I love this cookbook… but you are shocked about that aren’t you.

I am a huge GP fan and I love that I am not limited to only the light cooking section of the cookbook world as I have made this lifestyle change these past few months. Instead, I am loving finding great recipes I can adapt or many I can even serve up as is within the pages of my favorite style of cookbooks.

In fact, I am guest blogging over on Gooseberry Patch’s Blog today as a part of their new guest blogger series! Check it out!

Now enough about me! How about we give you the opportunity to win a copy yourself! (Click through to the blog if you are reading this via email).

If widget below doesn’t show, click the rafflecopter link to enter.

Oh no! I don’t have any light recipes! I was just diagnosed with obstructive sleep apnea though and losing weight will help so I’m in the market for some light recipes.

My light recipe is angel hair pasta mixed with zucchini, onion and pepper strips that have been sauteed in olive oil. A little garlic bits helps to give this dish a wonderful taste.

I have this great recipe for a skinless “fried” chicken that’s really baked with a crispy coating.

I have a good recipe for boneless, skinless chicken where you marinade it in seasoned plain yogurt and then bake in oven. It is so moist you don’t even miss the skin.

I’m a dessert freak, so I love the light cheesecakes a lot. Savory-wise, I adore the light chilis.

Is Taco Soup light? We don’t use sour cream or a lot of chips and cheese…
I also have a light potato soup recipe. It’s pretty good.

I love making chicken tortilla soup because it is light and tasty. It also has a lot of fiber in it.
