Lime Orzo Salad

Dear Reader-
We have found another summer flavor-filled dish that we just love!
We found a recipe for Lemony Orzo Salad in Summer in the Country…
Now truth be told I was out of lemons, so we converted this Lemony Orzo Salad to Lime Orzo Salad… I would have called it Limey Orzo salad… but that just sounds to much like Slimy Orzo Salad… which just sounds gross and does not do this yummy dish justice… just sayin’
Anyhoo… cook up your pasta… you know me… I whipped out my handy dandy Rice Cooker ( which is just a  larger Micro Cooker at my house ;)).
Wash up your spinach.
Tear up your spinach into bite size pieces.
Drain your pasta and then place it on top of your spinach.
Now cover until your spinach wilts.
Meanwhile… in a bowl near you, combine 1/4 Cup Olive Oil
1/2 Cup of Lime (or Lemon) Juice
2 T each of Onion and Garlic Powder
1 t of Salt, Pepper and Dried Parsley (Psst… I forgot the parsley…)
Mix ‘er up
Now stir the mixture in with the pasta and spinach.
Add in a 2 oz can of olives
And 1 Cup of Chopped Tomatoes
Mix it up…
Now you can eat it warm or cold… your choice!

Lime Orzo Salad

Ingredients

  • 16 oz Orzo Pasta - Uncoooked
  • 3-4 Cups Baby Spinach - Chopped
  • 1/4 Cup Olive Oil
  • 1/2 Cup Lime Juice
  • 2 T Garlic Powder
  • 2 T Onion Powder
  • 1 t Dried Parsley
  • 1 t Salt
  • 1 t Pepper
  • 2 oz Can Black Olives
  • 1 Cup Tomatoes - Chopped

Instructions

  • Cook Pasta.
  • Place spinach in a bowl, cover with cooked pasta and seal with saran wrap until spinach wilts.
  • Combine remaining ingredients except tomatoes and olives.
  • Add the mixture to the pasta and combine.
  • Fold in tomatoes and olives.
  • Serve warm or chilled.
