I am wrapping up all the recipes from my $50 Challenge today. You might recall that my strategy in stretching my dollars was to throw a ham in my crock pot (using this recipe) and make everything from Freezer Breakfast Burritos to Easy Crock Pot Ham and Beans to BBQ Ham Pineapple Kabobs.
Ham Fried Rice
Today’s Ham Fried Rice is one of my favorites from the challenge. We LOVE Puddie’s Pork Fried Rice but we had never tried fried rice with ham before this challenge.
Since I was on a budget, I decided to grab two Steamfresh rice bags with veggies from the freezer case rather than purchasing rice and veggies separately. This also made for a SUPER quick meal prep. I tossed the rice in the microwave while heating my ham in the skillet. Added the rice to the skillet and made a little well in the center. Cracked two eggs and scrambled in the middle of my well gradually mixing the cooked egg in with my ham, rice and veggies. I liked mine as is but Puddie added a little soy sauce to his.
Easy peasy!
Ham Fried Rice
Ingredients
- 1 Cup Chopped Ham
- 2 Bags Steamfresh White Rice with Veggies- Cooked
- 2 Eggs
- Salt and Pepper to Taste
- Soy Sauce- Optional
Instructions
- Heat ham in large skillet.
- Add cooked rice with veggies.
- Make a well in the center of the skillet.
- Add the two eggs and salt and pepper to taste.
- Scramble eggs in the center and gradually mix into the rice and ham mixture.
- Serve with Soy Sauce if desired
