“Fried” Baked Chicken

Are you looking for a great way to lighten up a classic favorite like fried chicken? My “Fried” Baked Chicken recipe does just that! The flavored Panko bread crumbs give this dish that crunch you are looking for without all the added fat.

We have been making this dish in my family for ages in one form or another. Growing up, my mom would use Frying Magic (loved that stuff!) to coat the chicken before baking, but the method has stayed the same. Mom would often make some version of this before every family vacation. She would bake up a big batch and put into a Tupperware container and keep in the cooler for the drive.

We would always have cold “fried” baked chicken, pork and beans from the can and barbecue chips that first day on our trips. Oh and we would also have a big batch of Zucchini Bars too- yum!

“Fried” Baked Chicken

We have made “Fried” Baked Chicken with skinless chicken legs, boneless, skinless chicken breasts and thighs- both bone in and boneless. The most difficult part of this recipe might be choosing your choice of cut of chicken!

The rest is super simple. You just take your egg whites and place in a shallow bowl. Place bread crumbs and seasonings in a gallon size baggie and shake to mix. Coat chicken pieces in egg whites before placing into the baggie a couple pieces at a time to toss and coat. Place coated chicken in two greased 9×13 pans and bake at 350 (turning half way through) for 30-40 minutes or until chicken reaches an internal temperature of at least 165. (I usually cook it to 170).

My Secret Weapon

I prefer to cook my chicken whether on the grill, in the oven or on the stove to the right internal temperature rather than a set time so that it always comes out juicy and not dry.

My meat thermometer is one of my favorite kitchen tools. It has a magnet on it so it can hang on the side of the oven or grill while the probe does its job inside the oven/grill and an alarm notifies me of when the meat reaches the temperature I set. LOVE that feature! I can’t tell you how many times I have forgotten the meat on the grill/in the oven and that alarm has saved us from eating charcoal for dinner.

“Fried” Baked Chicken

Ingredients

  • 10 Boneless Skinless Chicken Thighs (or breasts or other preferred cut)
  • 3 Egg Whites
