Chicken Bake

Dear Reader- This yummy Farmhouse Chicken Bake is a MUST MAKE recipe… Just sayin’

Chicken Bake

This baby comes from Gooseberry Patch’s yet-to-be released 101 Hearty Recipes that I have had the pleasure of reviewing thanks to the Patch.

Would you like to win a copy before you can buy it thanks to my friends at Gooseberry Patch?

Just pop over to my giveaway post and enter up to 12 times!

PhotobucketAnyhoo, back to this awesome recipe… Did I mention that Vickie of GP recommended this one herself? You know it has to be GOODe!

Now this baby was so good that I decided to enter it into A Latte with Ott, A’s Iron Chef Challenge that is being sponsored this month by King Arthur Flour. The kind people there were nice enough to give me a free bag of their all purposed flour to whip this yumminess up.

Chicken Bake

Chicken Bake

To start, you should boil up 8 oz of macaroni.

Well, you know me and my microcooker obsession, but for this large batch of macaroni, I actually used the rice cooker.

Chicken Bake

Ya see at my house, the rice cooker just serves as a bigger microcooker… don’t worry, I pay it overtime 😉

Chicken Bake

Meanwhile in a big ole skillet near you, melt up 1 T of butter.

Chicken Bake

Once they are cooked up, go grab that flour.

Chicken Bake

Take 2 T and gradually add it to the onions and stir until smooth.

Chicken Bake

Now add 1 1/2 cups milk and 1/2 of chicken gradually, stirring constantly

Chicken Bake

And add in the seasoning: Salt, Pepper and 1/2 t thyme

Chicken Bake

When makin’ gravy like substances, I like to put all my seasoning in a prep bowls to keep me from running around and messin’ around and burnin’ the gravy.

Once the gravy sauce thickens, add them seasonings in…

Chicken Bake

Add in 4 cups of cubed chicken

Chicken Bake

1 cup frozen peas- thawed

Chicken Bake

Add 8 slices of crispy bacon– I used turkey bacon, but you can use the pork variety if ya want to 😉

Chicken Bake

And  1 cup shredded cheese

Chicken Bake

Now mix ‘er up

Chicken Bake

Now transfer that yumminess to a casserole dish, or if your skilletChicken Bake is oven proof, just keep it there.

Dude, why do more dishes if you don’t have to!

Oh and ya Freeze-O-Rama mamas out there will want to stop and chill at this point 😉

Chicken Bake

Now, when you are ready to bake this baby up, go take 1 T butter and sit it outside for 2.1 seconds so it melts… or if you prefer, melt it the traditional way, ya know, in the microwave 😉

Chicken Bake

Mix it up with 1 cup bread crumbs and then sprinkle them on top of your casserole.

Chicken Bake

Now bake it up at 350 degrees for 30 minutes.

Chicken Bake

Yummy ooey, gooey, GOODEness!

Cris, is that pre cooked chicken? From you pic it looks like rotisserie chicken.

Penny- It is the precooked (frozen and thawed) cubes from tyson, although
you could totally use rotisserie chicken chopped up (fresh or frozen and
      thawed)
