Dreamsicle Cake

Dear Reader-

Last night Miss Add graduated from preschool and mama needed a quick and easy cake for our little family celebration.

Anyone that knows Miss Add, you know she is a big fan of chocolate, rainbows and icing… So I gave her the choice of rainbow cupcakes, chocolate cake or a jello cake with cream cheese icing…

She chose the jello cake and it was a big hit… as in there wasn’t a single piece left kind of hit… my favorite kind!

I started with my favorite white cake mix and whipped it up according to the box.

Ideally I would have made it in my 9×13 pan, but my main pan was in use and my back up pan had a bad spot in it and I had to throw it out… so I used a Bundt pan.

Now, I didn’t really think through the jello cake process in using a Bundt… so bare with me… it turns out delicious regardless 😉

Anyhoo… Once you are all baked up, use a skewer or a for to poke holes in the cake once it cools.

Now take a small box of orange jello and dissolve it in 1 Cup of Hot Water.

Now add 1/2 cup cold water (NOT 1 Cup like the box calls for).

And pour over top of cake

Pour it all… don’t be afraid…

The cake will soak it up…

Now take a brick of softened cream cheese and mix it with 1 1/3 Cups Powdered Sugar. If your icing is not thin enough, you can adjust the recipe by adding 1 T water.

Put the icing on your cake and pop in the fridge for at least 2 hours…

Ingredients

  • 1 White Cake Mix Prepared
  • 1 Small Box Orange Jello
  • 1 Cup Hot Water
  • 1/2 Cup Cold Water
  • 1 8 oz Block of Cream Cheese
  • 1 1/3 Cups Powdered Sugar
  • Optional 1 T Water

Instructions

  • Poke cake with fork or skewer.
  • Dissolve Jello in hot water.
  • Add cold water to Jello.
  • Pour over the cake.
  • Mix cream cheese and powdered sugar (add water if you need to thin icing).
  • Top cake with icing and refrigerate for 2 hours.
