This recipe is one that Michael has always cooked on the stove, so I thought we should give it a try in the crockpot. And man did it cROCK!

It is hard to decide what the best part was…that it was simple enough for Michael to throw together before he went to work (he doesn’t go in until 9:00 and we  live 3 minutes from his office versus me working 30 minutes from home and have to drop off Ryder and have a start time of 7:30)…or maybe it was that it smelled heavenly even on my back porch…or maybe it was that I was able to get out a bowl as soon as I got home for me and Ryder to eat as soon as it cooled! It is just too hard to choose the best part!

Crockpot Green Beans, Potatoes & Sausage

I knew this was something that I wanted to make this week, but wasn’t sure how I was going to pull off peeling potatoes and getting to work on time…this girl is NOT a morning person. Snooze buttons were made for a reason people! So I batted my eyelashes and put on my prettiest smile and asked Michael to pitch in on this one. Besides, 9:00-5:00 is 8 hours, and we were completely guessing about what kind of time it would take to cook, so I didn’t really want it to get turned on until 9:00 anyway. He’s a good hubby and said yes…and I leaped for joy!

I chopped up the sausage the night before…and you could probably go ahead and chop up your onion too to save time in the morning, but Michael is the onion chopper in this family, so I left it up to him when he wanted to cry. 😉

After washing, peeling and cutting up your potatoes, throw them in the bottom of your crockpot. Then add your onion. Next throw in your sausage. Followed by your green beans, salt, pepper and a LITTLE bit of red pepper. (This girl is a wimp when it comes to spicy food…it truly hurts me if there is any good amount of heat at all. I’m weird, I know.) Remember that you can always add more salt, pepper and red pepper later once all the flavors have really mixed together, so I usually start with just a little of each.

Please note that I have one of those GREAT BIG crockpots and this fills it up. So if you have a smaller crockpot, you might want to cut the recipe in half or it might not all fit. But with these amounts, we get to eat off of it for a few days which makes it a major Mommy Score on the budget side of things!

Cover, don’t peek and come back 8 hour later to a scrumdiliumptious meal!

Crockpot Green Beans, Sausage and Potatoes

Delicious and simple recipe for the crockpot! Green beans, potatoes and sausage- fix it and forget it!

Ingredients

  • 2 Packages of Traditional Rope Turkey Sausage
  • 6-8 Potatoes
  • 4 Cans of Green Beans
  • 1 Small Onion
  • Salt & Pepper
  • Red Pepper

Instructions

  • Wash, peel and cut up your potatoes and throw them in the bottom of your crockpot
  • Cut onion and add
  • Cut sausage into slices and add
  • Add green beans
  • Add salt, pepper and red pepper
  • Cover and cook on low for 8 hours.
