Do you want a super quick dessert to throw together that is absolutely amazing? Check out these Lightning Bars with almond icing from Gooseberry Patch’s Foolproof Family Recipes.

Lightning Bars with Almond Icing

In Foolproof Family Recipes, it says these are called Lightning Bars because they are so quick and easy to make with things you have in your cabinets…but I think it is because they disappear lightning quick! They are so good!

There is a local bakery that is famous (at least among my friends) for their “Smiley Face Cookies”. They are sugar cookies that are decorated with yummy icing making smiley faces. If you going past that bakery, you must have be very strong willed to not stop in and grab at least one Smiley Face Cookie. Well, I took a batch of these Lightning Bars with almond icing to our small group Sunday and was given the best compliments…”These taste just like Smiley Face Cookies!” and “These are just as good as Smiley Face Cookies!”

These Lightning Bars with almond icing are just a home run all the way around! They are made with ingredients that are already in your cabinets. They are quick and easy to make. AND they are as delicious as our favorite bakery cookie! Win. Win. Win.

Lightning Bars with Almond Icing

Preheat your oven to 350.

Grab your 8×8 baking pan and place your butter slices in the bottom.

Place your baking dish in the oven while you throw your batter together and let  your butter melt.

Put your eggs in a larger bowl and beat them.

Mix in your sugar, vanilla, baking powder, salt and flour.

Mix your melted butter into your flour mixture until well blended.

Pour your batter into your butter coated pan and bake for 20-30 minutes  until it passes the toothpick test.

While your bars are baking make your icing.

Mix together your powdered sugar, almond extract, milk, melted butter and salt.

Pour icing over your bars and let the bars cool.

Ingredients

  • 1/2 c butter sliced
  • 2 eggs
  • 1 c sugar
  • 1 t vanilla extract
  • 1 t baking powder
  • 1/2 t salt
  • 1 c all-purpose flour
  • Icing:
  • 2 c powdered sugar
  • 1 1/2 t almond extract
  • 1/4 c milk
  • 1/8 c melted butter
  • pinch of salt

Instructions

  • Preheat your oven to 350.

  • Put your eggs in a larger bowl and beat them.
  • Mix in your sugar, vanilla, baking powder, salt and flour.
  • Mix your melted butter into your flour mixture until well blended.
  • Pour your batter into your butter coated pan and bake for 20-30 minutes until it passes the toothpick test.
  • While your bars are baking make your icing.
  • Mix together your powdered sugar, almond extract, milk, melted butter and salt.
