Breakfast Burrito-Lite

Lighter version of my original Breakfast Burrito.

Ingredients

  • Pan of Light Scrambled Eggs
  • 20 Tortilla Shells 12 inch
  • 1 1/4 Cups Shredded 2 % Sharp Cheddar Cheese
  • 40 Small Slices of 98% Fat Free Ham

Instructions

  • Lightly warm tortillas on a griddle until soft.
  • Add 2 slices of ham, 1/3 cup eggs and 2 T Cheese to each Tortilla and then fold into burrito
  • Wrap burrito in paper towel and place in a freezer bag
  • To reheat, place in microwave (keep paper towel on) and heat for 60 sec, flip and heat for 60 more.
  • Contents will be VERY hot. Be careful
