Lighter version of my original Breakfast Burrito.

Ingredients
  • Pan of Light Scrambled Eggs
  • 20 Tortilla Shells 12 inch
  • 1 1/4 Cups Shredded 2 % Sharp Cheddar Cheese
  • 40 Small Slices of 98% Fat Free Ham
Instructions
  1. Lightly warm tortillas on a griddle until soft.
  2. Add 2 slices of ham, 1/3 cup eggs and 2 T Cheese to each Tortilla and then fold into burrito
  3. Wrap burrito in paper towel and place in a freezer bag
  4. To reheat, place in microwave (keep paper towel on) and heat for 60 sec, flip and heat for 60 more.
  5. Contents will be VERY hot. Be careful
