Lighter version of my original Breakfast Burrito.

- Pan of Light Scrambled Eggs
- 20 Tortilla Shells 12 inch
- 1 1/4 Cups Shredded 2 % Sharp Cheddar Cheese
- 40 Small Slices of 98% Fat Free Ham
Lightly warm tortillas on a griddle until soft.
Add 2 slices of ham, 1/3 cup eggs and 2 T Cheese to each Tortilla and then fold into burrito
Wrap burrito in paper towel and place in a freezer bag
To reheat, place in microwave (keep paper towel on) and heat for 60 sec, flip and heat for 60 more.
Contents will be VERY hot. Be careful
