Do you love fresh corn on the cob and garden tomatoes? You will love our Summer Corn Salad that takes the best of all summer has to offer and combines it into a delicious side dish!
This recipe is one of my all time favorites. We have made it for years. We look forward to it every summer and we even fake it in the winter sometimes 😉 with frozen corn and the tomatoes that are available that time of year.
BUT the very best time of year to have it is when the sweet corn is sugary sweet and the tomatoes are red on the vine.

Summer Corn Salad
And tis summer! So I am so excited to share it with you– and let you know it can be found in the new Gooseberry Patch Cookbook, Foolproof Family Recipes :).
This dish is a bit different from the Cilantro Corn Salad I shared the other day. The creamy avocado and basil are just perfect with the hint of lime in this Summer Corn Salad. Despite them being different, I still cook up my corn the same way 😉
Summer Corn Salad
- 4 Ears of Corn- Cooked and Cut Off the Cob
- 1 Avocado- Pitted and Chopped
- 4 Tomatoes- Chopped
- 1/4 Cup Fresh Basil- Chopped
- 4 Cloves Garlic- Minced
- Juice of 2 Limes
- Combine all ingredients gently.
- Serve immediately.
