Strawberry Banana Salad

Dinner just isn’t finished at our house without something sweet.

It has been that way since I was a kid. I used to LOVE it when mom would buy strawberries. Back then, strawberries where by far my favorite fruit. As it turns out, the apple doesn’t fall from the tree…err strawberry patch 😉

Bananas and Strawberries

The other night while I was away, Puddie took Miss Add to the Cheesecake Factory and guess what my girl ordered for dessert? Her favorite carrot cake? Strawberry shortcake? Cheesecake? Nope. She just wanted a bowl of strawberries! And, that is exactly what they served her up.

So while we might tend to the sweet tooth quite regularly around here, most days that means something simple. And when it is Strawberry Banana Salad night, Miss Add is one happy camper! In her book, it is second only to her love for Fruit Tacos.

And, much like the Fruit Tacos, I love it because it is super easy to whip up.

Bananas and Strawberries

You start by cutting the stems off of your strawberries (1 lb) and quartering them.

Next you cover the strawberries with your sugar (1/4 cup) and stir well. The sugar is going to work into the strawberries and begin to create a yummy syrup.

While that sits, cut up 3 bananas. Toss the pieces in and coat well.

If you can wait, let all the flavors hang out together for 20-30 minutes. Truth be told that rarely happens at this house…

This dish is made and gone in that time!

Sometimes I do sneak a batch to spoon over shortcakes or angel food cake. It is also perfect as an ice cream topper or for yogurt parfaits!

Now do note that this is a best as fresh recipe… leftovers don’t tend to taste as good, so make just enough up to enjoy after you make it.

    Sounds Great

In the Assisted I am living ,they serve in a Desert cup the exact same ingredients except that they have added the red summer pie filling.
