This weekend I cooked my butt off… well, I would have but then I ate what I cooked and wouldn’t you know it, those pounds found their way right back to my bootie 😉
Awkward bootie talk aside, this weekend we had company…
Cue cute baby picture.
Ya see Mr. Ryder brought his Mama and Daddy up to go to some local festivals… and then well Issac (last name Hurricane) came for a visit to land-locked Indiana and literally rained on our parade.
So Aunt Cris (me) got to cookin’ while the crew perused the Roku most of the weekend… except for the one day we bathed ourselves in 99% humidity (gotta love the Hoosier state).
I found this awesome recipe for a Brunch Casserole on morning in Gooseberry Patch’s online free recipe finder.
It can also be found in their Magic of Christmas Cookbook.
You start our by browning a pound of sausage.
I used my Microcooker and Mix N Chop to cook mine up in 6 minutes flat… just sayin
Start out by lightly spraying a 10 x15 cookie sheet with olive oil (a 9 x13 will work if you don’t have a 10 x15, your squares will just be thicker).
Now take 1 can of Crescent Rolls and press them together and form a crust on the bottom of the pan by pressing them together and spreading the dough across the entire pan…
Now take 3/4 Cup Milk
And add 4 Eggs…
Season with salt and pepper and beat well
Now take that sausage and sprinkle on top of the crust…
Pour the egg mixture over the top of the sausage evenly.
Top with up to 2 Cups of Shredded Cheddar
Bake at 425 degrees for 15-20 minutes or until set.
Cut into squares and enjoy!
Notes: I really liked this recipe. However, I am very tempted to make it in a smaller pan and– brace yourself– use less cheese. I think a thicker crust and thicker egg layer would take this dish to the next level.
Warning to all potential future company… I will be fiddling with this recipe and using you as my guinea pigs in the future.
