Rich & Creamy Chocolate Pudding

Are you looking for a snack to soothe your sweet tooth AND curb your hunger? My protein packed Rich & Creamy Chocolate Pudding will do the trick.

Tofu Chocolate Pudding

The reason this sweet treat is so satisfying is its secret ingredient…

Tofu.

I know, I know… believe me, I didn’t believe it either when I first saw it used in the original recipe years ago that I later altered a wee bit.



So when the good people at the National Soyfoods Association told me that April was SoyFoods Month and asked me to whip up something yummy I knew exactly what I was going to make. In fact this pudding is Puddie’s absolute favorite. He asks me to make it all the time.

Truth be told, I was really excited to have the opportunity to highlight National Soyfoods Month as I work with Soybean farmers everyday. Did you know that Indiana ranks 4th in the nation for soybeans?

Like a lot of meat eaters, it took me a while to figure out  that soyfoods aren’t just for vegetarians…

Nowadays we eat 3 soyfoods regularly around here and don’t think twice.

  • Tofu can be used in a lot of desserts as a great thickener that packs a protein punch.
  • Soynuts are a yummy satisfying  low cal snack that I like to throw in my purse.
  • Edamame is a great veggie to plate next to a steak or chop as a side dish.

So if you have always thought that soyfoods weren’t for you, you might give ’em another look-see…

There are some pretty yummy products out there that even us meat eaters enjoy… the proof is in the pudding 😉

Rich & Creamy Chocolate Pudding

This sweet treat packs a powerful protein punch thanks to its secret ingredient.

Ingredients

  • 1 Package Extra Firm Tofu
  • 1/2 Cup Dry Powdered Milk
  • 4 Cups Milk
  • 2 Small Packages Chocolate Pudding Sugar Free

Instructions

  • Combine half each of the tofu, powdered milk and milk in a blender.
  • Blend well.
  • Add 1 package of pudding and blend well.
  • Divide into four containers.
  • Repeat steps 1-4.
  • Chill in refrigerator for at least 2 hours before serving
