Quick Chicken Noodle Soup

Baby it’s cold outside! What better way to warm up than with a old favorite? This Quick Chicken Noodle Soup from Gooseberry Patch Gifts from the Kitchen is easy and ready in no time! And did I mention it is delicious?!

I love chicken noodle soup. There is just something about it that puts it in my top ten favorite comfort foods. It is great when you are feeling under the weather and when the weather is chilling you to the bone.

The forecast was not a pretty one and we just ran across the deal of the century on chicken, so this Quick Chicken Noodle Soup seemed perfect for my non-planning self. Prying the chicken (literally with a hammer and “pick”) from our overly packed freezer was the longest part of preparing this meal. So, since you probably won’t have that problem, this yummy dish will be ready in no time!

First you will need to cook your chicken. I made up four chicken breasts on our indoor grill because it is such a fast way to cook up chicken. You can use whatever is your preferred method. That was just over 4 cups after I cut it up, but we like lots of chicken in our soup, so that was fine by me.

While your chicken is cooking, combine your broth, water, parsley and onion in a large stock pot and bring it to a boil over medium high heat.

Add in your chicken and noodles. Reduce your heat and simmer for about ten to fifteen minutes.

Then serve it up! Yum!

Our package of noodles was larger than 8 oz and we like a ton of noodles, so I added in more than the 8 oz the recipe called for. If you do this though, the noodles will absorb more of the liquid, so it will be less soupy. With the original amount of noodles, it would be the perfect ratio of liquid to noodles. So live on the edge and change up this Quick Chicken Noodle Soup for your own preferences! 😉

Quick Chicken Noodle Soup

Ingredients

  • 4 c cooked chicken diced
  • 30 oz chicken broth
  • 4 2/3 c water
  • 1 T dried parsley
  • 1 t dried minced onion
  • 8 oz egg noodles uncooked

Instructions

  • Cook chicken and dice
  • While chicken is cooking, combine broth, water, parsley and onion in large stock pot
  • Bring to a boil over medium high heat
  • Add chicken and noodles
  • Reduce heat and simmer for 10-15 minutes
