When I first flipped through the pages of Gooseberry Patch’s Game-Day Fan Fare, a recipe jumped out at me… Hoosier Cake. Being a Hoosier, I naturally wondered why I had never heard of such a thing.
Upon polling my fellow Hoosiers, I didn’t find anyone who knew of the cake, so this past Easter, I decided to give it the Hoosier test.
As I prepared the oatmeal raisin batter from scratch, a familiar aroma came from the bowl that took me back to Grandma and Aunt Suzy’s kitchen. It reminded me a lot of the oatmeal raisin cookies they would make when I was a kid.
As I boiled the icing, Mom and I chatted on the phone and she told me she hadn’t had Brown Sugar Icing in forever… and I assured Dad (through Mom) that I would omit the coconut because despite everyone else’s love for the stuff, he has never been able to bring himself to enjoy it.
The verdict?
Hoosier Cake is a HUGE hit with Hoosiers 😉 And the Oatmeal Raisin cake’s biggest fan?
My Grandma.
Oatmeal Raisin Cake {Hoosier Cake}
Ingredients
- 1 1/2 Cups Hot Water
- 1 Cup Quick Oats
- 1 Cup Light Brown Sugar
- 1 Cup Sugar
- 1 tsp Vanilla
- 2 Eggs
- 1/2 Cup Shortening
- 1 1/2 Cups All Purpose Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1 Cup Raisins
Instructions
- Combine water and oats and set aside.
- Mix shortening, sugars, vanilla and eggs well in another bowl.
- Add in oats.
- Add remaining ingredients and mix through.
- Pour batter into a greased 9 x 13
- Bake at 350 for 35-40 minutes until middle is done.
- Cool before adding icing.
Brown Sugar Pecan Icing
Ingredients
- 1/2 Cup Butter
- 1 Cup Brown Sugar
- 12 oz Can Evaporated Milk
- 1 tsp Vanilla
- 2 Cups Shredded Coconut- Optional
- 1 Cup Chopped Pecans
Instructions
- Combine butter, sugar and milk and bring to a boil over medium heat, stirring constantly until icing thickens.
- Remove from heat and add remaining ingredients.
- Poor over cooled cake.
