When I saw this recipe in Fresh from the Farmstand, I knew I had to make it…

Well not only are these tomatoes super yummy, they are also super easy to make!
I didn’t have any large tomatoes, so I just prepared a pound of small tomatoes.
Wash ’em up and quarter them.
In a separate bowl, whisk up 1/4 cup olive oil
2 T Tarragon Vinegar (can use white wine vinegar if you can’t find tarragon)
2 t Mustard
1 clove of garlic-minced
1 t Salt
1 t Sugar
1/4 Cup (Yikes! Oopsie) teaspoon Pepper (I used Shallot Pepper)
1/4 Cup Parsley- chopped
Drizzle it over the tomatoes and let stand for 20 minutes up to 2 hours.
Or over greens for a super yummy homemade salad dressing.
Do not pass go, do not collect $200… make these tomatoes… you’ll thank me 😉
Lutece Tomatoes
Ingredients
- 1 lb of Small Tomatoes- quartered
- 1/4 Cup Olive Oil
- 2 T Tarragon Vinegar
- 1/4 Cup Fresh Parsley- chopped
- 1 Clove Garlic- minced
- 2 t Mustard
- 1 t Sugar
- 1 t Salt
- 1/4 t Pepper
Instructions
- Combine all ingredients except for tomatoes and whisk well.
- Drizzle over tomatoes and let stand for 20 minutes to 2 hours.
- Serve as is or over greens
