A Low Fat Creamy Basil Salad Dressing every fridge deserves to have on her shelf

As  my salad taste buds are learning to venture beyond the world of iceberg lettuce and French dressing…

Kitchen grown basil

And as I am becoming skilled at plugging in my AeroGardenLow Fat Creamy Basil Salad Dressing and producing ample amounts of basil despite my very brown thumbs….

Something Different, Something Good

Like kismet, this recipe for a little jar of joy wanders into my life… Homemade Creamy Basil Salad Dressing…

Homemade Salad Dressing

You guessed it, this recipe is from Gooseberry Patch’s brand new 101 Soups, Salads & SandwichesLow Fat Creamy Basil Salad Dressing (to be released on Jan 6 – or you can get the Kindle VersionLow Fat Creamy Basil Salad Dressing today!).

Shallot

Place 1 chopped Shallot in your blender.

Clove of Garlic

Add 1 chopped Garlic Clove

Greek Yogurt

Add 2/3 Cup Greek Yogurt… it is a thicker yogurt that gives this dressing its low fat base.

Balsamic vinegar

Toss in 3 T of Balsamic Vinegar

Lemon

1 T Lemon Juice

Olive Oil

And, 3 T Olive Oil…

Basil

Then the recipe calls for 1/2 Cup of Dried Basil… but since I had a crop ;)… I was dying to use it! I used 3 (of the 7) different varieties of basil I had growing in my AeroGarden. Low Fat Creamy Basil Salad Dressing

So I harvested as much as I could and threw them in and supplemented with the tube of fresh chopped basil I had in the fridge that I needed to use up.

Basil Herb Blend

Last but not least, I seasoned with salt and pepper…

Salt & Pepper

Blend well and pour into a jar…

Light, flavorful dressing

If you like Basil… make some now.

Seriously.

I’ll wait.

It would compliment a Caprese Salad well…

We used it on basic salad greens with flavorful seasoned tomatoes, fresh mozzarella and garlic croutons and the results were magnificent.

Low Fat Treat

You would never know it is low fat…

like I have said before, Puddie has threatened to drink it from the jar and from the looks of what is left in the fridge, I am beginning to wonder if he did…

Hmmm…

It would be good to dip fresh veggies in as well…

if I were the kind of gal that did that…

I’m not, but who knows… a few months ago I wasn’t a gal that regularly ate salads either…

Things and people can change… just sayin’

Low Fat Creamy Basil Salad Dressing

Ingredients

  • 1 Shallot Chopped
  • 1 Garlic Clove Chopped
  • 2/3 Cup Greek Yogurt
  • 1 T Lemon Juice
  • 3 T Balsamic Vinegar
  • 3 T Olive Oil
  • Salt and Pepper to Taste
  • 1/2 Cup Dried Basil

Instructions

  • Place all ingredients into a blender and blend well.
  • Store in sealed container

    This looks like a great dressing recipe! And yea, my basil plant, although on its last legs, is still surviving upstairs on the windowseat. I brought it in last fall. It had been huge in the summer and is dwindling little by little. I need one of those gro planters like you have! Thanks for the recipe, Cris

    I know that making your own dressing is always better. Always. Yet, I still don’t take the time to do it very often. I think the problem is that I don’t eat enough salad. That should’ve been my New Years resolution. Eat. More. Salad. 

    On another note, your site is looking fantastic. Keeps getting better.
