Italian Chicken Bake

When I saw the recipe for Mom’s Chicken Casserole in Gooseberry Patch’s new 101 Cozy Casseroles, I knew exactly what I was going to do…

Ya see, I have been spotting these yummy combos in the Red Gold section of the Grocery store and I had been waiting to find the perfect recipe to try the new Basil, Garlic and Oregano Diced Tomatoes…

Long time readers will know that I adore Red Gold (and have since I was a child)… but this was the first time I ever used these babies… and now, they are a must have on my pantry list!

Anyhoo…

So, recipe in hand, I was about to discover one of the quickest, yummiest dinners I had made in a long time… And yet, sooo simple!

First, I grabbed two bags of Uncle Ben’s Whole Grain Medley… I chose to use one that was Chicken flavored and the other was Vegetable Harvest (I think).

Have you tried this stuff? Super simple way to get a side on the table or now that ya mention it, to whip up a casserole in no time flat 😉

I prepared them in the microwave… a whopping 90 seconds each and then poured them in to the bottom of my favorite 9 x 13 pan.

I then placed 12 Chicken Tenderloins on top of the rice. I like to use Tenders or Thinly Sliced Chicken Breast instead of regular Chicken Breasts in casseroles where the chicken lays on top. The dishes seem to cook more evenly that way…

I then poured my tomatoes on top and popped in the oven at 350 for 30 minutes covered (now I reduced my time because I was using a smaller cut of chicken– Full Chicken Breasts will take closer to an hour).

Once I pulled it out of the oven, I flipped my oven over to the broiler.

Then I sprinkled on a little bit of Shredded Parm 1/4-1/2 Cup and popped under the broiler for 5 minutes.

Everyone LOVED this… Big Puffy Hearted it!

And I beyond LOVED how simple it was to throw together.

Italian Chicken Bake

Ingredients

  • 2 Bags Uncle Ben's Whole Grain Medley Brown Rice any flavor
  • 6 Chicken Tenderloins- uncooked
  • 1 Can Red Gold Diced Tomatoes with Basil Garlic and Oregano
  • 1/4-1/2 Cup Shredded Parmesan Cheese

Instructions

  • Prepare the rice as package indicates and pour into 9 x 13 pan
  • Lay Chicken on top
  • Pour Tomatoes on top
  • Cover with foil and bake at 350 for 30 minutes or until chicken is cooked through.
  • Uncover and sprinkle on cheese.
  • Broil for 5 minutes
