Homestyle Oatmeal Bread

Dear Reader-

I almost forgot to share this yummy homemade bread recipe with you because I am eager to share another cookbook review (and giveaway) with you…

But first things first… Homestyle Oatmeal Bread… YUM!

This recipe can be found in Gooseberry Patch’s The Harvest Table.

Psst… if you missed my giveaway of The Harvest Table  , don’t worry… Miss Heather has a giveaway going on right now… go on and enter now. I’ll wait.

Confession time… I love my bread maker. I wanted one for years and finally– about 6 years ago– I bought one.

So, when I make bread, I try to use it when I can… ya know since I invested in the thing and all 😉

It couldn’t be because I am lazy and really like that it does most the work for me…

Converting Bread Recipes to Bread Machine Recipes

Converting recipes can be a bit tricky though, but I found a great bread site to help us through.

I decided to take this recipe and convert it to 1 1/2 lb loaf in my bread maker…

Which meant I pretty much had to cut all the ingredients in half.

The next adjustment was the order of ingredients according to my bread machine.

Wet to dry- ending with the yeast.

I started with 1/2 Cup plus 2 T  Warm Milk and 1/4 Cup Warm Water

1 1/2 t Oil

2 T Brown Sugar

1 1/2 T Melted Butter

1 1/2 t Salt

1/2 Cup Quick Oats

1 1/2 Cups Whole Wheat White Flour

1 1/2 All Purpose Flour (I would have used Bread Flour, but I didn’t have any on hand)

And lastly… nice and dry on the top of the pile, 1 envelope of yeast.

I then set my bread maker on the wheat bread cycle and waited… for 5 minutes.

Adjusting Dough Consistency

About 5 minutes into my dough cycle, I noticed it was too dry so I added 1 t water-a tip from the site I mentioned above.

Adjust dough consistency

This is one of the most important things to remember when working with a new recipe! Check the dough after the first 5 minutes of mixing. The dough should form a smooth ball around the mixing blade and feel slightly tacky. If it appears soft or sticky, add additional bread flour, one teaspoon at a time. If it appears too stiff or dry, add additional liquid 1 teaspoon at a time.

Bread Break

After adjusting the dough with the itty bitty amount of water(?!?!) that was it… the machine did the rest.

It came out perfectly.

And sliced up quite nicely into dense slices of homemade GOODEness 😉

I haven’t made anything except white bread in my machine. Just found out recently about bread flour. (where was I? no clue!) Can this be made with all white flour, all bread flour or a mix of the two?

Most machines say they prefer bread flour, but I wouldn’t be afraid of using all-purpose myself.
