English Potato Cakes

Tonight’s Goode & Gooseberry Patch Project Recipe 
These babies are like a cross between hashbrowns and my mama’s mashed potato cakes. Mom used to take left over mashed potatoes and cook them up like pancakes…yum!
So, I grabbed some potatoes–I grabbed 3 instead of just the 2 it suggested since my taters were a little small.
I peeled them and grated them up… by hand… we all know how I feel about my food processor…just sayin’
Add in 2 beaten eggs
Then in a separate bowl mix up your dry goods
1/2 cup flour
1 t of Baking Powder (in honor of Aunt Lou)
1/4 t. of Sodee as Grandma would say…
Salt to taste
Now, mix ‘er all up baby
Put small spoonfuls on a hot buttered griddle and use spoon to push flat.
Once set, flip
Serve warm with ketchup
Enjoy!
