Cheesecake Tarts

WARNING: These little red devils are very tempting… one bite size at a time!
Tonight’s Goode & Gooseberry Patch Project Recipe: Cheesecake Tarts is PERFECT for all those holiday get togethers… bite size portions and  a super quick–easy peasy recipe!
Start out with 2 blocks of cream cheese
I used the Weight Watchers stuff… with the fiber and probiotics… cause I am pretending these are GOODe for me… it is ok, you can pretend with me if you’d like 😉
Toss in 2 eggs… crack them first…. oh and leave out the shells, the added crunch isn’t necessary 😉
1 T Lemon Juice
1 t Vanilla
3/4 Cup Sugar
Now line your cute little muffin tins
Pop a little Nilla wafer into each liner
Now pour the mixture into each liner.  
I sooo wish I had this little gadget for this task. 
Fear not, Santa has been notified 🙂 He says I have been GOODe this year 😉
Now bake these up for about 20 minutes in a 350 degree oven.
Cool and top with cherries.

    Ah come on! I am trying to get back on my diet horse. The only thing that is saving me is that you topped it with cherries, and those are not my favorite! Thanks for NOT using strawberries, or I would be out the door to get the ingredients! 😉
