Tonight’s Goode & Gooseberry Patch Project Recipe is Broccoli-Rice Delight
I started with 1 T oil in my stainless steel saute pan over medium low heat. The recipe called for 2 T, but I often find I can saute most veggies with 1 T.
I then tossed in 1 small onion-chopped
And two ribs celery-chopped and saute until tender
Add 1 bag of frozen broccoli-thawed and simmer for 15 minutes
Then add 1 cup of water and 1 cup of Cheez Whiz
1 can of cream of mushroom soup
1 cup rice
2/3 cup milk
1 large can of chopped green chilies
salt and pepper to taste
Mix ‘er up and bring to a boil then pop in the oven for 25 minutes at 350 degrees.
Totally lovin’ that my new Cuisinart set can go from stove top to oven…easy peasy!
Yum! A new family favorite.

I think I have had something similar a time or two. There's no replacement for a cheesy, veggie casserole in the fall and winter time.
