Easy Peasy Pesto

Easy Peasy PestoDear Reader-

I was so thankful to find this recipe for Pesto in 101 Farmhouse Favorites because my basil “crop” is getting out of control. (More on that in a sec)

DSC_7726Now back to my “crop”.

Even though I only planted half of my AeroGarden this time with basil but I still have it growing out of my ears! I can’t keep up.

This photo is AFTER harvesting the 2 Cups I needed for this recipe.

Don’t get me wrong, it is a VERY GOODe problem to have (and yes, there are plans to freeze some up for quick cooking)… however, this recipe was the perfect remedy for this basil lover 😉

Garlic

After throwing 2 cups of Basil into my blender, I tossed in 6 cloves of garlic.

If you don’t love the bite of garlic (like I do) you will want to reduce the number of cloves BIG time.

I loved it, but vampires need to beware…

Also, if your blender/food processor doesn’t do a good job of getting things really fine, you may want to mince them up before throwing them in.

Olive Oil

Add in 1/2 Cup Olive Oil

walnuts

And 1 Cup Walnuts and 1 tsp Salt

Puree until smooth.

Add in 3/4 Cups Fresh Parmesan  and stir until blended.

Serve up.

Garlic lovers will adore this recipe.

A little goes a long way…  so definitely plan on sharing this with friends… close friends, that won’t mind the garlic on your breath 😉

Easy Peasy Pesto

Super easy pesto recipe from Gooseberry Patch's 101 Farmhouse Favorites.

Ingredients

  • 2 Cups Basil
  • 1/2 Cup Olive Oil
  • 6 Cloves Garlic
  • 1 Cup Walnuts
  • 3/4 Cup Shredded Fresh Parmesan

Instructions

  • Puree all ingredients except the parm.
  • Stir in parm and serve

    Wow that is easy!!! Thanks, Pinning for later. My Basil crop was insane like this last year. But it was outside.
