For the last several months my family has had this amazing newfangled thing called a weekend.
As a rail road family, this has been (and will continue to be) a very, VERY rare thing.
So we have been soaking up these few precious moments where everyone is in the same place at the same time by taking family trips to the fishin’ hole when we can…
Now Mama is not really a fisherwoman, but Miss Add and Puddie are avid fisherpeople…
BUT, Mama does love to cook and read and relax with Mr. Octavius on the bankside…
To start, pull out two long strips of foil and lay out 6 strips of bacon (uncooked).
Add 3 large red potatoes, slice pretty thin and season them well with salt and pepper.
Now add 1/2 half of a large green bell pepper (chopped) and one small onion (chopped).
Now repeat… 6 slices of bacon, 3 large potatoes, salt and pepper, 1/2 bell pepper (chopped) and then 1 small onion (chopped).
Now wrap your sides in and add foil if necessary to make a watertight foil packet.
Place the packet bacon side down on a charcoal grill (lowered onto the coals) for 20 minutes.
Flip packet and cook for 15 minutes more.
Check potatoes for tenderness and serve.
- 12 Slices Bacon
- 6 Large Potatoes Sliced
- Salt and Pepper
- 2 Small Onions Chopped
- 1 Large Green Pepper Chopped
- Place 6 slices of bacon on two long strips of foil (laid out to make a packet).
- Add half of the potatoes and season them with salt and pepper
- Add half the onions and half the peppers
- Repeat layering with remaining ingredients.
- Close foil to create packet and grill lowered onto coals for 20 minutes.
- Flip and grill for additional 15 minutes.
