I have been in the pursuit of protein pretty much our entire challenge.
I don’t mind the diet change, as long as I feel full… and protein is where it is at…
I came home from church yesterday totally famished and ended up fixing eggs and oatmeal for lunch and I don’t mind telling you it was delicious… and JUST what I needed.
So when I figured out how to significantly lower the fat and calories in my favorite scrambled eggs, I knew I needed to which up a batch of my favorite Freezer Breakfast Burritos to have on the go for mornings when we need to start the day out right and we are short on time…
Not naming any names–hello there Mr. Thursday and Mr. Friday…
Anyhoo, so I put on my mad altering skills and got to work on this recipe… although most of the work was done for me because the new scrambled eggs cut out a whole big ton of the cals and fat from the original recipe.
While I finished up the scrambled eggs, I put Puddie on tortilla duty. He just heated my griddle up and heated up 20 tortillas flipping them as they bubbled… being careful not to let them crisp up… The goals was to just soften them up a bit.
Side Note: I know someone somewhere is gasping because my tortillas are flour and not whole wheat. Now before I get emails asking me why… Well it is simply because I much prefer the taste and texture of the flour tortillas in this dish… and Y2C is about making changes I can stick with… So, wheat tortillas didn’t make my lighter version cut of this family favorite… BUT if you love the wheat tortillas, then go for it!
I then put two small thin slices of 98% Fat Free Ham on each tortilla (Note: This is the kind that uses 6 slices as a serving).
To that, I added 1/3 cup of my Light Scrambled Eggs and 2 T of Shredded 2% Sharp Cheddar Cheese.
Then I folded them up burrito style and Puddie wrapped each one in a paper towel and bagged them for the freezer.
To reheat, I heat for 60 seconds flip and heat for another 60… my originals took 90 sec, but these seem to heat up quicker…
Regardless, let them cool before biting in… they will be HHHH-OOOT!
- Pan of Light Scrambled Eggs
- 20 Tortilla Shells 12 inch
- 1 1/4 Cups Shredded 2 % Sharp Cheddar Cheese
- 40 Small Slices of 98% Fat Free Ham
- Lightly warm tortillas on a griddle until soft.
- Add 2 slices of ham, 1/3 cup eggs and 2 T Cheese to each Tortilla and then fold into burrito
- Wrap burrito in paper towel and place in a freezer bag
- To reheat, place in microwave (keep paper towel on) and heat for 60 sec, flip and heat for 60 more.
- Contents will be VERY hot. Be careful
