Garden Fresh Basil Tomatoes

We interrupt our regularly scheduled PEACH-O-RAMA to bring you some other summer treats…

And I can’t think of too many things better than a garden fresh tomato.

So, I just sliced up a red and yellow tomato for a great dinner side the other night…

Sprinkled on a little kosher salt…

A smidge of fresh cracked pepper…

And I snipped a little boxwood basil on top for an extra burst of flavor…

Speaking of my basil… I am frantically trying to resuscitate my pour little plant…

Puddie says there is no hope. I say there is always hope! (Hopefully;) )

Truth be told, I am wanted in three states for herb murder…

I must confess that I killed my rosemary and regular basil plants and my boxwood basil is barely hanging on…

I am determined to overcome my brown thumbs… but you may pray for any plants in a 50 mile radius in the meantime… just sayin’

Oh and if you were wondering about the tomatoes… I didn’t grow them… Aunt Mary gave them to me…

I may not be able to grow them, but I can dress them babies up in all their yumminess!

Garden Fresh Basil Tomatoes

Ingredients

  • 1 Red Tomato- Washed & Sliced
  • 1 Yellow Tomato- Washed & Sliced
  • Kosher Salt
  • Fresh Cracked Black Pepper
  • Basil or Boxwood Basil finely chopped

Instructions

  • Arrange tomatoes on a plate
  • Salt and Pepper to taste
  • Sprinkle chopped basil on top

    I killed my herbs too!  (Although I had help from a ‘lil digging critter of some sort.)  Only one survived, but I don’t know what it is!  We ate some the other day; I think it might have been parsley…  😉

    I love fresh tomatoes! I have a brown thumb too, but did succeed in growing basil. The cilantro, zucchini and summer squash are a different matter. The cilantro never did do well. The squashes were overtaken by an awful spore-like fungus. I tried to treat them, but they just got worse! My tomato plants have given me a handful and I actually have 2 or 3 baby bell peppers. We may have decided that buying from a local farm is cheaper than gardening for us!
