Crispy Corn Flake Chicken

  • 10 chicken drumsticks and/or thighs
  • 1 egg beaten
  • 1 T water
  • 4 c corn flakes cereal crushed
  • 2 T olive oil
  • 2 t salt
  • 3/4 t crushed red pepper


  • Preheat oven to 400 degrees
  • Remove the skin from chicken and throw it away
  • Whisk egg together with the water in a small bowl
  • Crush up cereal in blender
  • In a second bowl, mix together the finely crushed cereal, oil, salt and crushed red pepper
  • Coat chicken in the egg mixture
  • Put chicken in cereal mixture and press breading firmly onto chicken
  • Place the chicken on a greased baking sheet and sprinkle with salt and pepper
  • Bake uncovered for 30-45 minutes
  • Make sure that the juices run clear and to check the internal temperature with a meat thermometer
