Ingredients
  • 2 Egg Whites
  • 2 T Oil
  • 1 1/2 t Vanilla
  • 1 1/2 Cups Pumpkin
  • 1/2 Cup Whole Wheat White Flour
  • 3/4 Cup All Purpose Flour
  • 1 t Cinnamon
  • 1/4 t Salt
  • 1 t Nutmeg
  • 1 t Baking Soda
  • 6 T Brown Sugar Splenda Blend or 1/2 Cup Brown Sugar
  • 1/4 Cup Chopped Pecans
  • 2 Oz Ghirardelli Milk Chocolate Chips- Chopped
Instructions
  1. Beat egg whites, oil, pumpkin and vanilla together.
  2. Mix remaining ingredients (except pecans and chocolate) in a separate bowl and gradually add to wet ingredients.
  3. Fold in chocolate chips and pecans.
  4. Line a regular muffin pan with liners and lightly spray with cooking spray.
  5. Scoop batter evenly into 12 muffin cups.
  6. Bake at 350 for 15 minutes or until it passes the toothpick test.
