Ingredients

  • 2 Egg Whites
  • 2 T Oil
  • 1 1/2 t Vanilla
  • 1 1/2 Cups Pumpkin
  • 1/2 Cup Whole Wheat White Flour
  • 3/4 Cup All Purpose Flour
  • 1 t Cinnamon
  • 1/4 t Salt
  • 1 t Nutmeg
  • 1 t Baking Soda
  • 6 T Brown Sugar Splenda Blend or 1/2 Cup Brown Sugar
  • 1/4 Cup Chopped Pecans
  • 2 Oz Ghirardelli Milk Chocolate Chips- Chopped

Instructions

  • Beat egg whites, oil, pumpkin and vanilla together.
  • Mix remaining ingredients (except pecans and chocolate) in a separate bowl and gradually add to wet ingredients.
  • Fold in chocolate chips and pecans.
  • Line a regular muffin pan with liners and lightly spray with cooking spray.
  • Scoop batter evenly into 12 muffin cups.
  • Bake at 350 for 15 minutes or until it passes the toothpick test.
