Laurie’s Stuffed Peppers

  • 4-5 Bell Peppers
  • 2 T Oil
  • 1 Onion- chopped
  • 8 oz Mushrooms- chopped
  • 1 Clove Garlic- pressed
  • 1 Cup White Rice- cooked
  • 1 Cup Brown Rice- cooked
  • 3-4 Dashes Hot Sauce
  • Salt and Pepper
  • 2 15 oz Cans Tomato Sauce
  • 1 lb Seasoned Ground Beef- Prepared
  • 1 Cup Mozzarella Cheese


  • Cut the tops off of the peppers and clean out the insides of each pepper- removing all seeds and membranes.
  • Boil peppers for 5 minutes and set aside.
  • Heat oil in a skillet and add mushrooms, onions and garlic. Sautee for about 5 minutes until the onions are translucent
  • Add cooked rice, hot sauce and salt and pepper and continue to cook for about 2 minutes.
  • Add 1 can of tomato sauce and the ground beef, heat through and set aside.
  • Pour 1/2 of the remaining can of tomato sauce into the bottom of a 9 x13 pan.
  • Stuff each pepper with the mixture and place in the pan.
  • Pour remaining sauce over the peppers
  • Bake at 350 for 25 minutes.
  • Sprinkle cheese on top and bake for another 10 minutes.
