When made this way they are called Buckles.First learned about them from a Martha stewart peach Buckle recipe. I think he main difference is making it in cast iron, if you have it,and the butter. I doctored ours up by adding some extra butter and it made it even better. It is now our favorite go to peach recipe when we get fresh peaches in the summer. I use about 4-5 medium sized ripe peaches.
