Spanish Rice and Sausage Dinner

Want to mix up the flavor for dinner, but have a picky eater on your hands? Well, this Spanish Rice and Sausage Dinner from Gooseberry Patch’s Rush-Hour Recipes is picky eater approved, quick and super easy! That is a major mommy score!

Michael asked the dreaded “What’s for dinner?” question at lunch today. And as you all know, I am not a planner. There has been a lot going on in the James’ household lately. So much so that I haven’t bought more groceries than the bare essentials for 2-3 weeks. So I groaned and said I don’t know.

What’s a girl to do when she really doesn’t want to pack up a baby that is ready for a nap and go to the store…she looks in the freezer then grabs a Gooseberry Patch cookbook!

Luckily, Mom had randomly given me a package of smoked turkey sausage. So I started flipping through Rush-Hour Recipes and found this Spanish Rice and Sausage Dinner.

Like I have said before, I am a picky eater. It annoys the tar out of the hubs since he loves to try new things all the time…and well, I’m the cook in the house and would like to eat what I fix. 🙂

I have honestly never made a recipe like this with salsa in it. So, for me, I was going out on a limb (I live so dangerously), but thought it sounded pretty good. And boy was I right!

Spanish Rice and Sausage Dinner

Cut your sausage links into 1 inch pieces while your oil heats in a large skillet.

Now place the sausage pieces in the skillet and brown (or blacken if you are me…I have never been able to just lightly brown sausage links and actually prefer them blackened now!) on both sides.

While your sausage is browning, make your rice like you normally would except use broth instead of water. I didn’t have any broth, so I just popped two bullion cubes in with two cups of water and put it on to boil to make my broth. It worked wonderfully.

Once your sausage is browned, drain and return to the skillet.

Add your rice and salsa to the skillet. If you wanted to add in extra veggies, some sliced green peppers and fresh tomatoes would be a great addition.

Now sprinkle your cheese over top, cover and cook on low until the cheese is melted and wonderfully ooey and gooey.

Serve it up!

This was so filling that we didn’t have any sides with it. Dinner all in one dish! Woohoo!

Spanish Rice & Sausage Dinner

Ingredients

  • 14 oz package of Smoked Turkey Sausage
  • 2 t oil
  • 2 c instant rice
  • 2 c broth
  • 1 c mild or hot salsa
  • 2 c shredded cheddar cheese

Instructions

  • Cut sausage links into 1 inch pieces while the oil heats in a large skillet
  • Place the sausage pieces in the skillet and brown on both sides
  • While the sausage is browning, make the rice per directions on the box except use broth instead of water
  • Drain browned sausage and return to the skillet
  • Add rice and salsa to the skillet and stir together
  • Sprinkle cheese over top
  • Cover and cook on low until the cheese is melted
