This quick and easy Strawberry Waffle Cake is great for a fancy dessert on a weeknight, on the go or a great start for a Waffle Cake Bar for guests!

Strawberry Dessert

If you haven’t heard, waffle irons aren’t just for waffles these days.

Don’t get me wrong, they are great for these Buttermilk Cornmeal Waffles and these 5 minute semi-homemade waffles.

However… you have not fully utilized this kitchen appliance until you have had a warm and chewy hot Turtle Brownie Waffle (recipe coming soon) or piping hot cinnamon roll in 3 minutes flat (post soon).

A waffle iron is actually quite versatile when you start using it outside of it’s namesake use. It shaves time off of traditional baking times and often adds an interesting texture or dimension to countless recipes.

Which brings us to today’s recipe…

Strawberry Dessert

Strawberry Waffle Cake

The first time I had this treat was on New Year’s Eve at a friend’s house (Hi Kristy!). So, it was only fitting that I served it this year to my guests on New Year’s Eve to rave reviews.

The recipe couldn’t be easier.

Slice your strawberries and mix with sugar and then set aside.

Then you just prepare a white cake mix like you would to bake a cake. With your iron nice and hot and set on medium, spray it with cooking spray.

Pour batter into your iron and cook until set.

Remove from iron and repeat until all cakes are made

Top each cake with strawberries and whipped cream.

Waffle Cake Bar

Mix things up a bit with different flavors of cake mix and a variety of toppings.

Think about it… Red Velvet Cake with Cream Cheese Icing Drizzle… Butter Pecan Cake with Pecans and Butterscotch Topping… Chocolate Cake with Marshmallows and Sprinkles… need I go on?
