I am so stinkin’ excited about this! Long time readers will know that I used to freezer cook ALL-THE-TIME. Ya know where you make up meals ahead of time so you can just throw them in the oven when you get home and (my favorite part) have zero clean up to do after dinner.

I have freezer cooked in a lot of different ways over the years. But, as of late, I usually only make up a few staples like Breakfast Burritos and Lunch Burritos on my own and then I annually plan with my girlfriends to have a HUGE freezer cooking get-together where we crank out a total of over 100 meals to split and take home to our freezers.

But truth be told, I think I got a little freezer-burnt out when it came to freezer cooking on my own. I loved the convenience of having the meals ready for me when I needed them and loved (LOVED) that it helped me keep my kitchen tidy. However, the two-day method exhausted me and I never really followed through enough with the other methods to get the big pay off of having it all done (read= it still felt like I was cooking all the time).

About a year ago I launched this little site dedicated to crock pot recipes and I discovered that freezer cooking could be made a WHOLE lot easier with freezer packs. Prior to that, I had used my slow cooker to cook food on freezer cooking days, but it had never occurred to me to make the packets up (many uncooked) to throw in the slow cooker later– pure genius!

Freezer Packs for Crock Pots

Freezer packs solve so many issues for both freezer cooking AND slow cooking.

  • Freezer Packets can be thrown together without a lot of pre-cooking and prep, unlike many freezer cooking casserole meals.
  • You can freeze the packs flat in freezer bags with very little hassle come cooking time AND it saves TONS of freezer space.
  • Many crock pot freezer pack meals do not require you to thaw them (or fully thaw) before tossing in the slow cooker.
  • Placing frozen food in the slow cooker lengthens the time the food can cook and helps prevent overcooking, one of the downfalls of a lot of crock pot meals.
  • Freezer packs can allow you to divide up huge crock pot recipes (a tendency with a lot of slow cooker recipes) into more appropriate sized meals for your family (read: fewer leftovers).
  • It is incredibly easy to make multiple crock pot freezer packs quickly. Making freezer cooking much more manageable.

I thought I would start sharing with you some of the meals we have been converting into freezer packets so you can join in the fun (and the godsend convenience ; ) ).

First up is one of our VERY favorite Recipes That Crock meals… One Pot Crock Pot Chicken Dinner.

We absolutely love it. The problem is my slow cookers tend to cook on the hot side– even on low. While this meal can technically cook for 6-8 hours, I have found that a lot of times it is cooked perfectly at 5 hours in my hot pots ;).

So, I thought it would make a wonderful freezer pack that I could throw into the slow cooker frozen and stretch that cooking time a bit. And, it worked beautifully.  It also let me reduce the size of the meal just a tad to make it just right for my family.

Best of all? I threw 3 packets together in 15 minutes. That’s right, 3 meals ready in my freezer for whenever I need them!

Crock Pot Freezer Packs: One Pot Chicken Dinner

Crock Pot Freezer Packs- Make ahead of time and freeze so you can throw them in the slow cooker and go!

Servings: 1 packet (Feeds 4)

Ingredients

  • 6 Small Red Potatoes halved
  • 1 Cup Baby Carrots
  • 1 Sweet Onions- quartered
  • 1/2 Cup Chicken Broth
  • Salt Pepper and Poultry Seasoning to Taste
  • 2 lbs Boneless Skinless Thighs
  • 4 sprigs rosemary
  • Optional: 1 tsp Freeze Dried Garlic

Instructions

  • Place a freezer bag in a large bowl and place veggies in the bag.
  • Add chicken and pour chicken broth over chicken.
  • sprinkle with seasonings and add rosemary/garlic.
  • Close bag and shake/smoosh well to combine the flavors.
  • Unzip bag slightly to remove as much air as possible.
  • Freeze flat on a cookie sheet and then transfer to freezer shelf.
  • To prepare: Either thaw in refrigerator night before and cook on low for 5-6 hours OR run frozen bag under faucet briefly to loosen food from bag and place contents in slow cooker frozen cooking on low for 6-8 hours.

    I made something similar to this and the potatoes turned black. Is there a trick to prevent this?

      Mine did not turn black on me… I’m wondering if the chicken broth (salt) kept them from turning… Did your previous recipe have broth in it?
