Dear Reader-
As most people, I have tons of childhood memories tied to food and food traditions.
A couple of those memories center around taco salad and two little restaurants in my home town.
The first memory is of how many times my mom would show up after school with my favorite taco salad from Bob’s Superburger before I would run off to my after school activities. It was always a basic taco salad with Fritos as the corn chip of choice and I loved them… and the thoughtfulness of my mom bringing them to me.
The second memory is of the taco salads at Pine Valley… the local store my dad would take me for lunch occasionally. Their salad was also a basic taco salad, but their corn chip of choice was Doritos.
At our house, we make them both ways… yet no matter how much I make them, they are never *quite* as good as they were to me back then…
But then I think perhaps Miss Add is making those memories now that I did then when Mom sits down with her to enjoy a fun taco salad.
I start with a basic bed of lettuce.
I then take my seasoned ground beef and cook it up with some taco seasoning per the package.
Although, next time I think I am going to try this homemade seasoning mix.
Spoon some taco meat over the lettuce.
Add a little shredded sharp cheddar cheese
A little tomato
A spoon or two of salsa or taco sauce
And a handful of crushed Doritos or Fritos to add a little crunch.
Note: I like to get the snack size bags of chips to help with portion control.

Easy Taco Salad
Ingredients
- 1 Bag of Salad
- 1 lb Taco Meat- Prepared
- 1 1/4 Shredded Sharp Cheddar
- 1 Tomato Chopped
- Salsa or Taco Sauce to taste
- Crushed Doritos or Fritos to taste
Instructions
- Layer ingredients as listed into individual bowls

We made exactly the same thing, but then drizzled Green Goddess dressing over the top – at least that’s how it was done here in Wisconsin. Loved that stuff and still love Green Goddess dressing. It seems to be one of the few creamy ones that doesn’t have MSG!

My mom makes it a different way. We use lettuce, ground beef without taco seasoning, red kidney beans, cheese, cucumbers, Doritos, and French dressing. She puts tomatoes and olives on the side for my dad and brother, since she and I don’t like them. It’s really good.
